RECIPES Summer is upon us and what better way to enjoy it than with some fresh seafood. Crayfish prices will undoubtedly go through the roof. So what are the other options? Morton Bay bugs, fresh or cooked prawn’s maybe spanner or mud crabs. Recently whilst wandering the markets in Springvale I noticed that there are plenty of meaty live crabs around. There is no need to fear these nippy crustaceans as they are simple to cook and delightful in a salad, pasta or risotto. The easiest way to make a quick meal would be to cook some shelled prawn tails tossed in a little butter, chilli lemon grass, garlic and shallots. Finishing with a dash of the latest release of Five Sons chardonnay and a little cream this would be perfect tossed thru pasta or risotto or served with a light salad. Alternatively make up a flavoured butter with lemon &
lime zest, grated ginger, a little chilli and palm sugar. This can be smeared
on bugs cut length ways and cooked under the griller or on the BBQ. Back to top
